The first time I attempted making a galette, I was experimenting with ingredients I had on hand, which happened to be a mix of cherry tomatoes and feta. The kitchen filled with the most delightful aroma as the tomatoes roasted and the butter in the pastry melted together. There was a sense of rustic charm in the air, as I pieced together the flaky crust, leading to a moment I won't soon forget. It's amazing how simple ingredients can come together to celebrate the essence of summer on a plate. This roasted cherry tomato and feta galette has become a staple in my kitchen since that discovery.

Ingredients

  • Pastry: A flaky pastry is the foundation, and using cold butter is crucial for achieving that melt-in-your-mouth texture.
  • Cherry Tomatoes: Sweet and ripe cherry tomatoes bring bright flavor and color, especially when roasted to perfection.
  • Feta Cheese: Creamy feta adds a tangy richness that complements the sweetness of the tomatoes beautifully.
  • Olive Oil: A drizzle of good-quality olive oil enhances the flavors and gives the tomatoes a luscious roast.
  • Fresh Basil: Fresh herbs brighten the dish, adding an aromatic touch that elevates the overall taste.

What You'll Need

Pastry

01 1 1/4 cups (160 g) all-purpose flour
02 1/2 tsp fine sea salt
03 1/2 cup (115 g) cold unsalted butter, cubed
04 1/4 cup (60 ml) ice water, plus more if needed

Filling

01 2 cups (300 g) cherry tomatoes, halved
02 3 tbsp olive oil
03 1/2 tsp sea salt
04 1/4 tsp freshly ground black pepper
05 1 tsp dried oregano or thyme
06 5 oz (140 g) feta cheese, crumbled
07 1 clove garlic, minced
08 1 tbsp fresh basil, chopped (plus extra for garnish)

Finish

01 1 egg, beaten (for egg wash)
02 Freshly ground black pepper, to taste

Steps

Step 01

Prepare pastry dough: In a large bowl, combine flour and salt for the pastry. Add cold butter and work it in with your fingertips or a pastry cutter until mixture resembles coarse crumbs. Add ice water gradually, mixing until dough just comes together. Shape into a disk, wrap in plastic, and chill for 20 minutes.

Step 02

Preheat oven and prepare baking sheet: While dough chills, preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 03

Prepare tomato filling: In a bowl, toss cherry tomatoes with olive oil, salt, pepper, oregano (or thyme), and minced garlic.

Step 04

Roll out pastry: On a floured surface, roll out the chilled pastry to a rough 12-inch (30 cm) circle. Transfer to the prepared baking sheet.

Step 05

Assemble galette: Sprinkle half the feta over the center of the dough, leaving a 2-inch (5 cm) border. Top with cherry tomato mixture and sprinkle with remaining feta and chopped basil.

Step 06

Fold edges and apply egg wash: Fold the pastry edges up and over the filling, pleating as you go to form a rustic edge (the center will be exposed). Brush pastry with beaten egg.

Step 07

Bake galette: Bake for 35–40 minutes until golden brown and tomatoes are roasted. Let cool for a few minutes.

Step 08

Garnish and serve: Garnish with more fresh basil and freshly ground black pepper. Slice and serve warm or at room temperature.
