01 - 1 cup fresh lemon juice

03 - 1/2 cup granulated sugar
04 - 6 3/4 teaspoons unflavored gelatin powder (about 3 standard envelopes)

# Steps:
01 - Combine the lemon juice, water and granulated sugar in a small saucepan; sprinkle the gelatin evenly over the surface and allow it to bloom for 2 minutes.
02 - Place the saucepan over medium heat and stir constantly until the sugar and gelatin dissolve completely; do not bring to a boil. Remove from the heat and stir in the lemon zest.
03 - Place 10–15 gummy bears in the bottom of each serving cup so they sit in a single layer for best visual effect.
04 - Carefully pour the warm lemonade gelatin mixture over the gummy bears, filling each cup to the desired level.
05 - Allow the filled cups to cool at room temperature for about 10 minutes, then transfer to the refrigerator and chill for at least 2 hours or until fully set.
06 - Before serving, garnish each cup with a mint leaf and a lemon slice if desired; serve chilled.
