07 - 1 small red onion, finely chopped
08 - 2 tablespoons fresh coriander, chopped
09 - 1 ripe avocado, diced (optional)

13 - 1 teaspoon olive oil
14 - 1 teaspoon chili powder
15 - 1/2 teaspoon ground cumin
16 - Salt and black pepper to taste

# Steps:

01 - In a skillet over medium heat, warm olive oil. Add ground beef, chili powder, ground cumin, salt, and pepper. Break up meat as it cooks until browned and fully cooked, about 5 to 6 minutes. Remove from heat and set aside.
02 - Set oven temperature to 400°F (200°C).
03 - Spread tortilla chips evenly on a large ovenproof platter or baking sheet.
04 - Distribute rinsed and drained black beans evenly over the chips, followed by an even layer of shredded cheddar and Monterey Jack cheeses. Add cooked ground beef if using.
05 - Scatter sliced jalapeños and half of the chopped red onion evenly across the cheese layer.
06 - Place platter in preheated oven and bake for 8 to 10 minutes, until cheeses are fully melted and bubbling.
07 - Remove from oven. Garnish with diced cherry tomatoes, remaining chopped red onion, diced avocado if desired, and chopped fresh coriander.
08 - Serve immediately with sour cream and salsa on the side.

# Expert Tips:

01 -
  • They come together in under half an hour, which means you can go from craving to eating faster than ordering delivery.
  • Everyone customizes their own plate, so there's no judgment about toppings or heat levels.
  • The contrast of melted cheese, crispy chips, and fresh toppings hits all the right textures at once.
02 -
  • Cheese should go on before jalapeños; it acts as a glue that keeps everything from sliding around as things heat.
  • Save at least half your fresh toppings for after baking, or they'll wilt into the heat and lose their personality.
03 -
  • Pat your canned black beans completely dry with a paper towel before adding them; excess moisture is the enemy of crispy chips.
  • Mix your cheese blend in a bowl before sprinkling so it distributes evenly rather than one type clumping in one corner.
